White Chicken Chili

This is by far one of my favorite things to make on a cold day. It’s full of yummy ingredients and it’s pretty easy to make. I try to avoid dairy, so I don’t use the cheese or sour cream and to be honest I don’t miss it at all, this chili still taste wonderful without it. I hope you love this recipe as much as I do.

White Chicken Chili

3 16 oz. cans Great Northern Beans, drained

2 chicken breast, cooked and chopped (in a pinch I use a rotisserie chicken from the deli)

1 Tbsp. olive oil

1/2 c. chopped white onion

4 cloves garlic, minced

1 4 oz. can chopped green chilies

1/4 tsp. black pepper

2 tsp. cumin

1/4 tsp. cayenne pepper

1 1/2 tsp. dried oregano

4 c. chicken broth

Monterey Jack cheese (optional)

sour cream (optional)

crushed tortilla chips (optional)

Shred or chop chicken and set it aside. In a large saucepan heat olive oil and add chopped onions. Saute until translucent, about 8-10 minutes. Stir in garlic, chilies (with juice), cumin, cayenne pepper, oregano and saute 2 minutes. Add broth and undrained beans. Bring to boil, stirring frequently. Reduce heat and add chicken. Keep at low heat and stir frequently for about 10 minutes. Ladle into bowls and add cheese, sour cream and crushed tortilla chips if desired. Enjoy! (I like to serve this with a big slice of cornbread.)

Friday Favorites

Hi everyone! I hope you all had a good week. This weeks favorites are very random…but they are things that I really love…decor, beauty, food…and a set of face masks!!

2 Tier Wood & Metal Stand Target does it again!!! This stand is so versatile and very pretty. This is perfect for your dining room table or even your kitchen island. It’s a great price (under $34.00) and I think this will be something that I will use year round!

Pink Lily Luxury Self Tanner I haven’t used many self tanners because they all have a horrible odor to them and I can’t stand it. I kept reading about this new one from Pink Lily so I decided to give it a try and…it has NO odor. That alone makes me happy, but then you factor in how easy it is to apply and how good the color looks…all I can say is WOW! I also purchased this tanning mitt to apply it. I highly recommend trying this self tanner-it’s amazing.

Sanctuary Mask Set This mask is really comfortable and breathable. My daughters have to wear a mask all day at school and they both agree that these are comfortable. They come in a set of 5 with a few different print options to choose from.

Gluten Free Oreo Finally! I heard rumors about these a few months ago and was so excited to get them for my daughter when I saw them at Target. These taste really good, so good that they don’t taste gluten free at all.

Happy Friday! I hope you all have had a good week. My girls are back at school, Christmas is all packed up AND it’s snowing outside…that pretty much sounds like a good week to me! I have random Friday Favorites this week, but I think you’ll like what I’m sharing. Okay, let’s go…

Downy Infusions Amber/Bliss Fabric Softner If you love the scent of amber and rose this is for you. It smells wonderful and leaves a light scent on your clothes. I love it on my blankets and towels!

Lesser Evil Popcorn Popcorn made with Himalayan Pink Salt and Coconut Oil…need I say more! This popcorn tastes wonderful.

Olive and June Nail Polish Remover This acetone free nail polish remover is so easy. You just stick your finger into the center of the pot and twist until your polish comes off! It’s quick and mess free.

Beautycounter The Clean Deo This is Beautycounter’s newest product that was just released. It’s all all-natural, clean deodorant that actually works! It comes in 3 scents (my favorite is the Clean Rose!)

Emmolo Sauvignon Blanc If you are a Sauvignon Blanc fan I highly recommend you give this a try. It’s from CA and has a clean, crisp flavor with hints of apple and citrus.

Rainer Reflective Printed Tight I got these from Athleta for Christmas and I’m absolutely in love with them! These are perfect for colder mornings and they have zip pockets also. The are comfortable and I love the pattern.

Welcome 2021

Happy New Year! I (like so many) are very happy to see 2021. I know 2020 was a very difficult year for so many and the beginning of a new year brings hope and positivity that I think everyone can use!

I wanted to share what I hope to improve on in the new year. I don’t like to call them “resolutions”…let’s call them goals instead! Do you make goals for the new year? I always worry about actually typing out my goals and then not following thru on them and being disappointed in myself….but here go’s nothing!!

  1. I want to start eating healthier. These past few months of curbside dinners and desserts have really caught up with me. I recently turned 43 (eeek!!) and my metabolism is definitely not what it use to be. I need to start making healthier choices and listening to my body. This past week I’ve really tried to be more aware of my food choices and its amazing how I’ve noticed a difference in the way I feel (physically and mentally). Eating healthier for me needs to be a lifestyle change, not a diet. I’m trying to be more mindful about my choices and I think this will be something that everyone in my family will benefit from too.
  2. I want to start being more active. I admit when the weather turns cold my desire to get out and walk in the morning fades, but I need to either find an alternative or learn to deal with it! I prefer to walk outside rather than go to the gym, but I need to get over it. We pay for a family gym membership and I have no excuses to not use it. I’m mad at myself as I even typed out that sentence…I pay for a gym membership and don’t go!!!! Ok, that has to change. I’ve always felt uncomfortable going to the gym to work out (what if I don’t know how to work a machine is always what I thought), but I’m going to move past it and just do it. (Having my husband or daughters with me should help too!)
  3. I want to take better care of my nails. Yes, I know it seems like a easy thing to do, but my nails and I have a love/hate relationship. I go through periods were I take great care of them; they are long and painted all the time, but as soon as one breaks I pick on them until they all break and my nails are nonexistent!!! I need to stop doing that!
  4. I want to read more. I really enjoy reading and I wish I did it more. I have so many books that I’ve taking pictures of and wanted to read, but then I just watch tv at night instead. I’m going to work on turning off the tv at night while I’m laying in bed and reading instead…this will be a hard on for me, but I’m really going to try to make it a priority.

Ok, those are my goals for 2021. I’m going to really make an effort to achieve all of my goals, not just for myself, but for my family. I’ve learned a lot about myself in 2020, but one of the main things I learning is that life is short and we need to surround ourselves with people who make us feel good about ourselves. My family makes me happy, they make me laugh, they make me cry, they make me want to be the best version of myself and my goals will only make me better-both physically and mentally.

Banana Bread

This time of year I feel like all I want to do is bake and watch Hallmark movies!!! There is something about the smell of something sweet baking in the oven that I just love soooo much. Okay, so speaking of baking, today I wanted to share a really yummy banana bread recipe that I’ve been playing with for the last few months. It has such great flavor and is perfect in the morning with a cup of coffee or even as a late night snack:). It’s a quick recipe to put together and your house will smell amazing while it’s in the oven.

Banana Bread

4 medium over-ripe bananas

2 eggs, beaten

8 Tbsp. butter, softened

3/4 c. brown sugar

1 tsp. baking soda

1/8 tsp. salt

2 c. flour

sugar to sprinkle on top, optional

Preheat oven to 350 and grease a loaf pan. In large bowl mash bananas with a fork and add butter, eggs and brown sugar. Mix together. In another bowl mix flour, salt and baking soda together. Slowly add flour mixture to banana mixture and mix. Spoon into loaf pan and sprinkle with sugar (optional, but it adds a great level of texture to the bread!). Bake for 45-55 min. or until toothpick comes out clean when placed in center of bread. Let cool in pan for 10 min then place on a wire rack to finish cooling. Serve alone or with butter (my favorite way to eat it). Enjoy!

I can’t believe it’s December! This year has definitely been an interesting one (I think we can all agree on that)!!! I know this month can get crazy for a lot of us with so many things to do so I’m going to try to share things through the month to help you out. Fireball Apple Pie Drink

With Thanksgiving just a few days a way I wanted to share one final recipe with you and I saved the best one for last! This drink is such a festive drink that not only taste wonderful, but is pretty to look at too! I hope you’ve enjoyed my weekly recipes I have shared these past few weeks…I’ve enjoyed sharing the recipes my family enjoys at Thanksgiving with you all.

Fireball Apple Pie Drink

1 shot Fireball Whiskey

1 c. Apple Cider

1 splash Ginger Ale

1 Tbsp. Cinnamon Sugar

1 Cinnamon Stick (optional, to garnish)

1 apple slice (optional)

Dip the rim of cocktail glass in water on plate then put cinnamon sugar on plate and roll rim of glass in it to cover. Put ice in glass (I prefer single ice balls). Pour Fireball over ice then add apple cider. Finish with a splash of ginger ale and stir. Serve with cinnamon stick or apple slice on top (or if your feeling extra fancy, both 😉).
