This time of year I feel like all I want to do is bake and watch Hallmark movies!!! There is something about the smell of something sweet baking in the oven that I just love soooo much. Okay, so speaking of baking, today I wanted to share a really yummy banana bread recipe that I’ve been playing with for the last few months. It has such great flavor and is perfect in the morning with a cup of coffee or even as a late night snack:). It’s a quick recipe to put together and your house will smell amazing while it’s in the oven.
Banana Bread
4 medium over-ripe bananas
2 eggs, beaten
8 Tbsp. butter, softened
3/4 c. brown sugar
1 tsp. baking soda
1/8 tsp. salt
2 c. flour
sugar to sprinkle on top, optional
Preheat oven to 350 and grease a loaf pan. In large bowl mash bananas with a fork and add butter, eggs and brown sugar. Mix together. In another bowl mix flour, salt and baking soda together. Slowly add flour mixture to banana mixture and mix. Spoon into loaf pan and sprinkle with sugar (optional, but it adds a great level of texture to the bread!). Bake for 45-55 min. or until toothpick comes out clean when placed in center of bread. Let cool in pan for 10 min then place on a wire rack to finish cooling. Serve alone or with butter (my favorite way to eat it). Enjoy!
